After attending a Pamela Salzman cooking class at a friend’s home last week, I left not only with a handful of new recipes but a bounty of tips and tons of inspiration. I already own and use her Kitchen Matters cookbook, which I absolutely love for its practical approach to nutrition through delicious, healthful meals. Rather than preach a diet of do’s and dont’s, Pamela’s recipes stem from whole food sources avoiding anything processed. Her core principle of eating a wide variety of seasonal, organic food is doable and something I can relate to.
For this class, she made Barley with Cucumbers, Golden Beets and Mint Vinaigrette, Creamy Tomato Soup, Salad with Lemon Cashew Dressing, Sweet Potato and Black Bean Tacos with Avocado-Lime Cream and an Apricot-Almond Galette(similar). Pamela makes it look so easy, and I’ve already successfully replicated a few of the recipes. They were a hit with my family followed by requests to cook like this more often.
For anyone who likes to cook with nutritiously dense ingredients for a healthy lifestyle, Pamela’s website is a must follow. It’s filled with fantastic recipes and meal planners and loaded with tips on food selection, kitchen essentials and many of her favorite products.
