I would consider myself a healthy eater but now more than ever I’m very mindful of everything that goes into my body. As mentioned in a previous post, my top priority right now is to do whatever I can to build a strong immune system. I’m trying to stock up on food and limit market runs to once a week. I’ve never been much of a meal planner so getting creative with recipes is required.
Fortunately, Pamela Salzman has kept me plenty inspired. I subscribe to her blog and refer to her book “Kitchen Matters” frequently. The other day, she shared recipes using pantry staples, which I could definitely use help with these days. So timely in the current environment. After stocking up on rice, beans, and pasta, a little direction in this category is greatly welcome.
I planned on attending a private class at a friend’s home this week which of course needed to be canceled. So now, I have two things to look forward to…the release of her new book “Quicker Than Quick” in April and the rescheduled class in June! Until then, I can tune in to her online classes which she has currently offered at a discount.

She is doing a daily Instagram Live cooking classes at 2 PST daily and they have been incredible. Whatever she’s cooking has become my daily meal plan — and my family couldn’t be happier. Can’t wait for her new cookbook!
