Last week, I posted a photo in my Instagram story of my favorite veggie salad. Self-isolating at home, my boys have become creative in the kitchen and this is one of the winning results (crepes too!) Many of you asked for the recipe so I asked Tom, my oldest son, to share his creation. It is so delicious!
Tom’s Veggie Salad
1 cup chopped cucumber
1/2 cup chopped carrots
1/2 cup chopped tomato
1/2 cup chopped asparagus
1 cup chopped broccoli
1/2 cup chopped sugar snap peas
1 cup chopped celery
1 1/2 cup chopped apple
6-7 cherry tomatoes* (chopped by hand)
1-2 oz greens: spinach, super greens, etc. loosely torn into small pieces
1/4 avocado
1/2 cup of cold black beans (chickpeas or edamame make great alternatives)
Pinch of hemp seeds
1/2 tbs pistachios
1 tbs crushed walnuts
salt
pepper
Trader Joe’s Everyday Seasoning
Dressing:
1 tsp olive oil
1 tsp apple cider vinegar
2 tsp balsamic vinegar
Freshly chopped dill
1. Either chop by hand* or place in a food processor all of the vegetables
2. Place chopped veggies in a large bowl and gently toss with greens
3. Lightly salt and pepper, then add a little Trader Joe’s Everyday Seasoning
4. Make dressing mixing olive oil, apple cider vinegar, balsamic vinegar and
5. Mix everything together and place in an individual salad bowl
6. Add avocado sliced across the top, salt directly
7. Add cold black beans (chickpeas or edamame make great alternatives)
8. Sprinkle with hemp seeds, pistachios, and crushed walnuts

I didn’t know you had sons. Are they older? I also have two at home, one in college and one in high school and they’ve been cooking a lot also which is nice and I think good for them. Thank you for sharing. Take care.
